Crispy Tostadas with Mashed Avocado and Cabbage Slaw

Mexican food ? is full of flavor and fun to cook. A fruity, chewy New England IPA pairs perfectly with Mexican spices and hearty tortilla based dishes. Tostadas might be a bit messy, but are oh so delicious ?. Enjoy these easy to make, vegetarian tostadas with our new NEIPA Wicked Sunshine.

Pickled Onion

1 red onion
1 lime
1 tbsp vinegar

Finely chop one red onion. Place in a bowl with the juice of one lime, a few splashes of white vinegar (apple cider vinegar works as well) and season with salt and pepper. Let the onions soak up all that yummy lime juice for an hour, stirring occasionally to mix everything up.

‘Refried Beans’

1 white onion
1 tsp spiskummin
1 tsp chili powder
2 cloves garlic
2 packs Borlotti beans
Vegetable bouillon
Cilantro
1 lime

Place a pan on medium heat, add olive oil and sweat a finely chopped onion for 5 minutes. Add cumin, chili powder and garlic. Simmer for another 2 to 3 minutes. Add two packs of drained borlotti beans and a splash of water. Simmer the beans for 10 to 15 minutes, then mash them up with a potato masher. Add a half cube of veggie bouillon, a handful of chopped cilantro, lime juice, and salt and pepper to taste.

Cabbage Slaw

¼ head of red cabbage
¼ head of green cabbage
Cilantro
1 lime
1 tsp spiskummin
1 tsp chili powder

Finely grate the red and green cabbage into a bowl. Add a handful of chopped cilantro, juice from one lime, cumin, chili powder and season with salt and pepper. Mix well. Add more lime or seasoning to taste.

Mashed Avocado

3 ripe avocados

Roughly chop up three avocados, season well with salt and pepper, then mash up with a fork until creamy and chunky.

Preparing the Tostadas

4 – 8 Corn Tortillas
Olive Oil
Cilantro
Cherry tomatoes
Sour cream or shredded cheese (optional)

Preheat your oven to 200. On a parchment paper covered baking sheet, place the corn tortillas. Brush with olive oil and bake each side for 4 to 5 minutes. The tortillas should come out crispy on the edges but not completely crispy to help with eating. Place the crispy tortilla in the middle of your plate. Begin with a layer of beans, then avocado, and finally slaw. Top with the pickled onions, freshly chopped cilantro and cherry tomatoes. Adding a dollop of sour cream is delicious, or even shredded cheese. Try to eat it without making a mess! ??
