Recipe – Knäckebröd

Bread ?is a must for any family meal, and knäckebröd has been a Swedish ??tradition for hundreds of years. Add a few modern baking techniques ?‍??‍?, and you have a super tasty, crispy bread that everyone will crunch down with a smile ?.

Ingredients (makes 10 – 12 pieces):
1 tsk Dry Yeast
2 dl Room Temperature Water
2 tsk Bread Spice
2 krm Salt
3 dl Rye Flour
3 dl Flour

Baking Instructions:
Begin by rehydrating the yeast in the water for 10mins. Mix all the dry ingredients in a bowl, then add the water. Knead until you have a firm dough. Leave the dough covered in the fridge overnight. Take the dough from the fridge and divide it into 10 – 12 balls. Leave the the dough balls at room temperature for 1 – 3 hours. On a lightly floured surface, roll each dough ball out very thin. Once rolled out, sprinkle over sea salt and poppy seeds. Bake two at a time, oven at 250°C, for 10 mins or until beautifully browned. The great thing about this hard bread is that you can bake them several days before serving. They will stay crispy and delicious for a weeks if keep in a cool dry place. Serve with plain butter, herb butter, gravad lax or alongside some yummy dried meats and cheese. ?
